The Best Business Writing 2013 (Columbia Journalism Review Books) edited by Dean Starkman, Martha M Hamilton, Ryan Chittum, Felix Salmon
2013 | EPUB | 990.76KB

An anthology Malcolm Gladwell has called "riveting and indispensable," The Best Business Writing is a far-ranging survey of business's dynamic relationship with politics, culture, and life. This year's selections include John Markoff ( New York Times) on innovations in robot technology and the decline of the factory worker; Evgeny Morozov ( New Republic) on the questionable value of the popular TED conference series and the idea industry behind it; Paul Kiel ( ProPublica) on the ripple effects of the ongoing foreclosure crisis; and the infamous op-ed by Greg Smith, published in the New York Times, announcing his break with Goldman Sachs over its trading practices and corrupt corporate ethos.

Jessica Pressler ( New York) delves into the personal and professional rivalry between Tory and Christopher Burch, former spouses now competing to dominate the fashion world. Peter Whoriskey ( Washington Post) exposes the human cost of promoting pharmaceuticals off-label. Charles Duhigg and David Barboza ( New York Times) investigate Apple's unethical labor practices in China. Max Abelson ( Bloomberg) reports on Wall Street's amusing reaction to the diminishing annual bonus. Mina Kimes ( Fortune) recounts the grisly story of a company's illegal testing -- and misuse -- of a medical device for profit, and Jeff Tietz ( Rolling Stone) composes one of the most poignant and comprehensive portraits of the financial crisis's dissolution of the American middle class.

The Concussion Crisis [Audiobook]

The Concussion Crisis [Audiobook]
The Concussion Crisis: Anatomy of a Silent Epidemic [Audiobook] by Linda Carroll, David Rosner, read by Pam Ward
2011 | MP3@192 kbps | 12 hrs 29 mins | 1.01GB

For far too long, the menace of concussions has been hidden in plain sight. On playing fields across America, lives are being derailed by seemingly innocuous jolts to the head. From the peewees to the pros, concussions are reaching epidemic proportions. This book brings that hidden epidemic and its consequences out of the shadows.

As frightening as the numbers are—estimates of sports-related concussions range from 1.6 million to 3.8 million annually in the United States—they can't begin to explain the profound impact of a hidden health problem that can strike any of us. It is becoming increasingly clear that concussions, like severe head traumas, can rob us of our memory, our mental abilities, our very sense of self. Because the damage caused by a concussion is rarely visible to the naked eye or even on a brain scan, no one knows how many millions might be living lives devastated by an invisible injury too often shrugged off as "just a bump on the head."

This book puts a human face on a huge public health crisis. Through narratives that chronicle the poignant experiences of real people struggling with this invisible and often unrecognized brain injury, Linda Carroll and David Rosner bring home its potentially devastating consequences. Among those you will meet are a high school football player whose college dreams were derailed by a series of undiagnosed concussions, a hard-driving soccer star whose own struggles with concussions pushed her to crusade for safety reform as a coach and soccer mom, and an economist who lost her career because of lingering concussion symptoms from a fender bender.

The Concussion Crisis weaves these human dramas with compelling stories of scientists and doctors who are unraveling the mysteries of how an invisible injury can wreak such havoc. It takes listeners into the top labs, where scientists are teasing out what goes wrong in the brain after a jolt to the head, and into the nation's leading concussion clinic, where patients get cutting-edge management and treatment. Carroll and Rosner analyze the cultural factors that allowed this burgeoning epidemic to fester unseen and untreated. They chronicle the growing public awareness sparked by the premature retirements of superstars like NFL quarterbacks Troy Aikman and Steve Young. And they argue for an immediate change in a macho culture that minimizes the dangers inherent in repeated jolts to the head.

The Concussion Crisis sounds an urgent wake-up call to parents, coaches, trainers, doctors, and the athletes themselves. The book will stand as the definitive exploration of this heretofore-silent health crisis. It should be required listening for every parent with a child playing sports—in fact, by everyone who has ever suffered a hard bump on the head.

Mastering the Art of French Eating: Lessons in Food and Love from a Year in Paris [Audiobook] by Ann Mah, read by Mozhan Marno
2013 | MP3@64 kbps | 9 hrs 01 mins | 246.57MB

The memoir of a young diplomat’s wife who must reinvent her dream of living in Paris—one dish at a time.

When journalist Ann Mah’s diplomat husband is given a three-year assignment in Paris, Ann is overjoyed. A lifelong foodie and Francophile, she immediately begins plotting gastronomic adventures à deux. Then her husband is called away to Iraq on a year-long post—alone. Suddenly, Ann’s vision of a romantic sojourn in the City of Light is turned upside down.

So, not unlike another diplomatic wife, Julia Child, Ann must find a life for herself in a new city. Journeying through Paris and the surrounding regions of France, Ann combats her loneliness by seeking out the perfect pain au chocolat and learning the way the andouillette sausage is really made. She explores the history and taste of everything from boeuf Bourguignon to soupe au pistou to the crispiest of buckwheat crepes. And somewhere between Paris and the south of France, she uncovers a few of life’s truths.

Both funny and intelligent, this is a story about love—of food, family, and France.

2013 | EPUB | 3.61MB

On a trip to Turkey as a young woman, chef Ana Sortun fell in love with the food and learned the traditions of Turkish cooking from local women. Inspired beyond measure, Sortun opened her own restaurant in Cambridge, Massachusetts, the award-winning Oleana, where she creates her own interpretations of dishes incorporating the incredible array of delicious spices and herbs used in eastern regions of the Mediterranean.

Shakespeare's Kitchen: Renaissance Recipes for the Contemporary Cook by Francine Segan
2003 | EPUB | 2.06MB
“Shakespeare’s Kitchen not only reveals, sometimes surprisingly, what people were eating in Shakespeare’s time but also provides recipes that today’s cooks can easily re-create with readily available ingredients.”
—from the Foreword by Patrick O’Connell

Francine Segan introduces contemporary cooks to the foods of William Shakespeare’s world with recipes updated from classic sixteenth- and seventeenth-century cookbooks. Her easy-to-prepare adaptations shatter the myth that the Bard’s primary fare was boiled mutton. In fact, Shakespeare and his contemporaries dined on salads of fresh herbs and vegetables; fish, fowl, and meats of all kinds; and delicate broths. Dried Plums with Wine and Ginger-Zest Crostini, Winter Salad with Raisin and Caper Vinaigrette, and Lobster with Pistachio Stuffing and Seville Orange Butter are just a few of the delicious, aromatic, and gorgeous dishes that will surprise and delight. Segan’s delicate and careful renditions of these recipes have been thoroughly tested to ensure no-fail, standout results.

The tantalizing Renaissance recipes in Shakespeare’s Kitchen are enhanced with food-related quotes from the Bard, delightful morsels of culinary history, interesting facts on the customs and social etiquette of Shakespeare’s time, and the texts of the original recipes, complete with antiquated spellings and eccentric directions. Fifty color images by award-winning food photographer Tim Turner span the centuries with both old-world and contemporary treatments. Patrick O’Connell provides an enticing Foreword to this edible history from which food lovers and Shakespeare enthusiasts alike will derive nourishment. Want something new for dinner? Try something four hundred years old.

Cheese It! [EPUB]

Cheese It! [EPUB]
Cheese It: Start Making Cheese at Home Today by Cole Dawson
2012 | EPUB | 32.97MB

From the editors of Hobby Farm Homes, Cheese It! provides a detailed introductory guide for making cheese at home, from easy-to-make soft cheeses like mozzarella, goat cheese, and cottage cheese to more challenging cheeses like Monterey Jack, parmesan, and aged gouda. Author Cole Dawson tackles four dozen different kinds of cheese, beginning with making butter, ghee, and sour cream from scratch and progressing to soft unripe cheeses such as paneer, chèvre, ricotta, and feta. International in its scope, each subsequent chapter tackles different kinds of cheeses, the tricks to success, and examples and recipes for each.

The chapter on unripe cheeses is followed by stretched curds, incorporating the brine bath to make mozzarella, asadero, provolone, and scamorza. Pressing and aging semi-hard cheese yield traditional Cheddar and variations, such as sage derby and goat Cheddar, plus Cantal, Monterey Jack, Cotswold, Caerphilly, and Caciotta. The process of washing curds to reduce the acidic level is the key creating cheeses like Colby, Gouda, and Edam, while washing rinds along with proper aging are the secrets to muenster, brick, raclette, Taleggio, and Tilsit. Using bacteria in cheese is key to making bloomy rinds, such as the triple-cream delights Camembert and Brie, and molded cheese, such as gorgonzola, Roquefort, and Stilton.

Ideal for new cheese makers, the book begins with chapters explaining the science involved in the process as well as safety precautions, basic skills, and the equipment that is required to begin making cheese in the kitchen. A total of 75 recipes includes delicious options to incorporate homemade cheeses, such as feta in spanakopita, mascarpone in tiramisu, mozzarella in polenta pizza, and chicken á la gorgonzola.

As the author emphasizes the importance of record keeping (so you can repeat your successes and not your “oopses”), the book concludes with a sample cheese diary so the cheese maker can account for timing, pressure, temperatures, and so forth.

The Natural Gourmet [EPUB]

The Natural Gourmet [EPUB]
The Natural Gourmet by Annemarie Colbin
1989 | EPUB | 2.91MB

Annemarie Colbin learned early of the important relationship between food and health: having grown up in a vegetarian household, she spent many years integrating Eastern eating philosophies with Western habits, studying the works of everyone from J.I. Rodale and George Ohsawa to Julia Child and James Beard. With The Natural Gourmet, Colbin takes her ideas about healthful eating a step further with meals that nourish body and soul, and that are elegant enough to serve to company.

The recipes included in The Natural Gourmet are the result of a collaborative effort by Colbin and ten students from her Natural Gourmet Cookery School in Manhattan. Each recipe is classified according to the Chinese Theory of the Five Phases, making it easy to combine the various courses to create a balanced, harmonious meal. Among the delicious dishes you'll find are:

  • Curried Apple-Squash Bisque
  • Mushrooms Stuffed with Garlic and Rosemary
  • San Franciscan Pizza
  • Lissa's Homemade Black Pepper Pasta with Scallion-Butter Sauce
  • Stuffed Cabbage Rolls
  • Jalapeno Corn Bread
  • Japanese Red Bean Soup
  • Lentil Croquettes
  • Potato-Cabbage Casserole with Dill
  • Black Bean Salad with Corn and Red Pepper
  • Pasta Salad with Zucchini and Chick-peas
  • Poached Salmon Fillets with Mock Hollandaise
  • Almond Flan with Raspberry Sauce
  • Ginger Lace Cookies
  • Orange Loaf with Walnuts
  • and many more

All the recipes are in keeping with Colbin's belief that food should be whole, fresh, local, and seasonal -- and, of course, delicious. Much more than simply a cookbook, The Natural Gourmet presents a combination of food preparation and philosophy that come together in a plan for healthful and graceful living.

1986 | EPUB + MOBI | 4.3/3.49MB

Ms. Colbin's view is thoroughly common sensical. She recognizes the fact that we are each individuals, and that once we have digested the facts, theories and proposals in her book we must make decide on what eating choices are best for us.

This is a thoughtful but not didactic book, solid and grounded in research, yet written with an entertaining touch. Rarely have we encountered a book that so well explains the nutritive quality of food, and its effects on body, mind and spirit. Don't miss it. -Amazon customer

Born With a Junk Food Deficiency [EPUB]

Born With a Junk Food Deficiency [EPUB]
Born With a Junk Food Deficiency: How Flaks, Quacks, and Hacks Pimp the Public Health by Martha Rosenberg
2012 | EPUB | 3.15MB

This hard-hitting exposé blows the lid off of everything you thought you knew about Big Pharma and Big Food. What goes on behind the scenes in these industries is more suspicious, more devious, more disreputable than you could have ever imagined. Rosenberg’s message is clear: the pharmaceutical and agricultural industries are tainting public health through marketing disguised as medical education and research, aggressive lobbying, and high-level conflicts of interest. If you’re concerned about the safety of the drugs you take and the food you eat, you owe it to yourself to read this important book.

  • Why is a drug tainted by eight corruption scandals, two illegal marketing settlements, and escalating troop deaths still a best seller—with sales actually increasing 700 percent in the 2000s? Why were the dangerous side effects of a drug frequently prescribed to soldiers kept hush-hush in order to please Wall Street? And why have Big Pharma, the government, and the medical establishment turned a blind eye to patients who fall victim to suicide as a result of antidepressants and other psychoactive drugs?
  • Why are women given largely unnecessary bone scans to help sell Big Pharma drugs that are linked to jawbone deterioration, esophageal cancer, and the very fractures the drugs are supposed to prevent?
  • Why was the Teflon Chicken Don—a man who was allegedly responsible for the biggest egg recall in US history in 2010 and nine related deaths, and who was cited with health, safety, and environmental violations since 1977—never punished and allowed a gracious retirement?
  • And why are Americans unwittingly eating beef, pork, and poultry raised with a growth-producing asthma drug—a drug perceived as so dangerous it has been banned in 160 countries—that is not withdrawn from the animals’ systems prior to slaughter?

Having gained the trust of more than twenty doctors, researchers, and experts who were willing to come forward and finally tell all, reporter and editorial cartoonist Rosenberg presents us with her shocking findings. Explosive material from whistle-blowers, scientists, unsealed lawsuits, and Big Pharma’s and Big Food’s own marketers exposes how these industries put profits before public safety and how the government puts the interests of business before the welfare of consumers, creating a double whammy that "pimps" the public health. What Rosenberg reveals about government complicity, regulatory food- and drug-safety lapses, and legislative injustices will both shock and appall.

Why have federal meat inspectors become pathetic figureheads in the nation’s slaughterhouses, laughed at by plant managers? Why are medical articles that have been exposed in lawsuits as fraudulent still standing and not retracted? Why was meat possibly containing the United States’ first mad cow sold to five California restaurants when the government said it wasn’t? And why are parents giving their one-year-olds acid reflux medications and their three-year-olds bipolar disorder medications?

You’ll find the answers to these and many more disturbing questions in this revealing book.

The Super Anti-Oxidants [EPUB]

The Super Anti-Oxidants [EPUB]
The Super Anti-Oxidants: Why They Will Change the Face of Healthcare in the 21st Century by James F Balch
1999 | EPUB | 1.56MB

By now you've probably heard that antioxidants are good for you, but a growing number of researchers are beginning to believe that adequate or even more-than-adequate amounts are absolutely vital to our health and well-being. This book by James F. Balch, M.D., describes a wide range of antioxidant substances in food and extracted into supplements that can help prevent or conquer illness and even slow the aging process itself.

As Balch points out, when our bodies turn oxygen into energy the reaction creates damaging byproducts known as free radicals, which "eat away" at us almost as rust does metal. Antioxidants help keep free radicals from forming and eliminate those already in the body, putting the brakes on at least some of this long-term damage. But while many people are aware of the antioxidant value of vitamins such as C and E, there are also powerful free-radical-scavenging substances in a wide variety of products-- including fish oils, tree barks, herbs, wine, and tea, as well as colorful fruits and vegetables.

Because antioxidants may be more effective in combination, Balch makes a good case for taking concentrated antioxidant supplements as well as eating a diverse diet. A few of the substances he mentions are controversial (and he's careful to provide brief cautions), but it wouldn't be surprising if many of the antioxidants he recommends eventually become mainstream tonics. --Ben Kallen

One Day It'll All Make Sense [EPUB]

One Day It'll All Make Sense [EPUB]
One Day It'll All Make Sense by Common with Adam Bradley
2011 | EPUB | 7.48MB

Common has earned a reputation in the hip hop world as a conscious artist by embracing themes of love and struggle in his songs, and by sharing his own search for knowledge with his listeners. His journey toward understanding—expressed in his music and now in his roles in film and television—is rooted in his relationship with a remarkable woman, his mother, Mahalia Ann Hines.

In One Day It’ll All Make Sense, Common holds nothing back. He tells what it was like for a boy with big dreams growing up on the South Side of Chicago. He reveals how he almost quit rapping after his first album, Can I Borrow a Dollar?, sold only two thousand copies. He recounts his rise to stardom, giving a behind-the-scenes look into the recording studios, concerts, movie sets, and after-parties of a hip-hop celebrity and movie star. He reflects on his controversial invitation to perform at the White House, a story that grabbed international headlines. And he talks about the challenges of balancing fame, love, and fatherhood.

One Day It’ll All Make Sense is a gripping memoir, both provocative and funny. Common shares never-before-told stories about his encounters with everyone from Tupac to Biggie, Ice Cube to Lauryn Hill, Barack Obama to Nelson Mandela. Drawing upon his own lyrics for inspiration, he invites the reader to go behind the spotlight to see him as he really is—not just as Common but as Lonnie Rashid Lynn.

Each chapter begins with a letter from Common addressed to an important person in his life—from his daughter to his close friend and collaborator Kanye West, from his former love Erykah Badu to you, the reader. Through it all, Common emerges as a man in full. Rapper. Actor. Activist. But also father, son, and friend. Common’s story offers a living example of how, no matter what you’ve gone through, one day it’ll all make sense.
